I'm doing a huge Happy Dance this morning to celebrate my next book cover!!! Take a look at this beauty:

KRISTIANICO'S CROWN PRINCE (The Royal Heirs Book 3) will release in February 2015, and it will be King Dario's oldest brother David's story. Now that David is Kristianico's Crown Prince - The Heir Apparent (next in line to the throne), his life will never be the same and neither will that of his on-again, off-again girlfriend, Holly. With the first of his chain of island retreat yoga spas about to open in Costa Rica, that's where he needs to be, not in Kristianico, trying to help his brother handle the Separatists promising to rip Kristianico apart. If only he could find all of the answers on his mat, one breath at a time, one yoga-deep belly laugh at a time. But maybe that's what they all need, a few good laughs and some quality time on a mat.

D. D. Scott's Favorite Vegetarian and/or Vegan Recipes: Spinach, Feta and Potato Gratin

Here's one of my fave vegetarian dishes that I made earlier this week! It's a terrific comfort food!!! A real belly-warmer.

As usual, I mix things up a bit (for example, this week I substituted vegan mozzarella cheese for the feta).

INGREDIENTS:

5-6 medium-sized red potatoes, washed, peeled and sliced 1/8-inch thick
1 bag frozen chopped spinach
1/2 cup (or more, if you like cheese) crumbled feta (or mozzarella)
2 1/2 cups heavy cream
3 eggs
salt and pepper to taste


DIRECTIONS:

Preheat oven to 375 degrees
Spray a 9x13 baking dish with olive oil cooking spray
Layer half of potato slices in dish, overlapping slightly
Spread the spinach on top of the potato slices
Add the cheese over the spinach
Layer the rest of the potato slices on top
In a separate bowl, whisk together the heavy cream, eggs, salt and pepper
Pour the cream mixture into the dish, covering the potatoes; cover with foil
Bake for 40 minutes, or until potatoes are tender when pierced with a fork (in my oven, it's more like 60 minutes)
Remove foil and continue to bake until top of gratin is golden, 35-40 minutes
Let sit 15 minutes before cutting and serving

It's That Time of Year for Wonderfully Witchy Reads!

This time of year, I'm all about getting back into my favorite Wonderfully Witchy Reads!!!

There are three series that I absolutely cannot get enough of, all of which would make amazing movies!!! (Actually, I think the Deborah Harkness Discovery of Witches is already heading for the big screen. Yay!!!)

Here's what I'm reading:

1. Michael Scott's THE MAGICIAN (The Secrets of the Immortal Nicholas Flamel, Book 2)

3. Debora Geary's A NOMADIC WITCH (A Modern Witch Series: Book 4)

Can Marcus find his way through the pain to love and healing? And can the witching community finally learn to keep their astral travelers safe?

A Nomadic Witch is book four of the top-rated A Modern Witch series. Light contemporary fantasy with a good dose of humor, a little romance, and characters you won't want to leave.

***This series has lots of magical cookies, which is always a good thing! LOL! You can't go wrong with powerful cookies!!! Truly my fave cast of characters (ensemble cast) ever written.

Okay, peeps, that should keep you in Wonderfully Witchy Reads for awhile. I think, between all three series, there are something like 29 books. LOL!!!

D. D. Scott's Favorite Vegetarian and/or Vegan Recipes: Hot Rice with Lemon Juice, Basil and Tomato

Happy Weekend, DDScottville Peeps!

Here's another wonderful and super-easy Vegan Recipe from my fave Vegetarian/Vegan gal Alicia Silverstone, straight from her terrific book The Kind Diet. ***I do change it up a bit according to my personal taste.

I make this just about every week, and it's so yummy!!!



Ingredients:

2 c Jasmine Rice, prepared per instructions on the bag (Alicia uses Arborio rice)
2 T EVO (Extra Virgin Olive Oil)
3 T fresh lemon juice
2 pinches of freshly ground black pepper
1/2 c (or as much as you want)fresh diced tomato
1 T chopped fresh basil
***I also add steamed broccoli and cauliflower (as much as you want)


Directions:

Once rice is cooked, transfer to a large mixing bowl. Add the olive oil, lemon juice, salt, pepper and mix well. Add the tomatoes (broccoli and cauliflower, if desired) and sprinkle with basil. Toss to combine and serve.


How easy is that?!

Lately, I've been "putting stickers on it"...bunches and bunches of stickers!!!

I've been having tons of fun getting THE KEYS' PRINCE (The Royal Heirs Book 1) print books ready for Book Signings all throughout the Sarasota area. I'll be announcing dates, times and locations soon!!!

I'll also be treating area libraries to a few copies so that all of you library peeps can enjoy my books as well!!!

What an exciting "new chapter" in my career! I'm looking forward to meeting many of you at my signings.

Along with the signings, my books will soon be available in several Downtown Sarasota boutiques. How fun is that?!
