D. D. Scott's Favorite Vegetarian and/or Vegan Recipes: Grape Tomato and Pecan Salad

Wavin' atchya, DDScottville Peeps!

This past weekend, I wanted to use the last of the produce in my frig, so I "tossed" together this fabulous salad - what I'm calling my Grape Tomato and Pecan Salad:



Ingredients

Spinach leaves

Heirloom Tomato

Red Grapes

Mozzarella cheese (for a vegan alternative, you can use Daiya or any of your fave non-dairy cheeses)

Crushed Pecans

Your Favorite Dressing (I like Annie's Naturals Organic Green Goddess)


Directions

Slice the grapes in half (length-wise), cut the tomato (however thick you like it) and dump both into a bowl along with the spinach, cheese and crushed pecans. Add your dressing, cover the bowl with a tight lid and give it a very healthy shake - it is a tossed salad, after all! LOL!!!
