Here's another wonderful and super-easy Vegan Recipe from my fave Vegetarian/Vegan gal Alicia Silverstone, straight from her terrific book The Kind Diet. ***I do change it up a bit according to my personal taste.
I make this just about every week, and it's so yummy!!!
2 c Jasmine Rice, prepared per instructions on the bag (Alicia uses Arborio rice)
2 T EVO (Extra Virgin Olive Oil)
3 T fresh lemon juice
2 pinches of freshly ground black pepper
1/2 c (or as much as you want)fresh diced tomato
1 T chopped fresh basil
***I also add steamed broccoli and cauliflower (as much as you want)
Once rice is cooked, transfer to a large mixing bowl. Add the olive oil, lemon juice, salt, pepper and mix well. Add the tomatoes (broccoli and cauliflower, if desired) and sprinkle with basil. Toss to combine and serve.
How easy is that?!
